Valentine's Day 2011 Feature: Hudson Restaurant & Lounge

NORTHWEST -- With the opening of Lincoln Restaurant near McPherson Square just a few short weeks away, Hudson Restaurant & Lounge Executive Chef Demetrio Zavala -- who will oversee both kitchens -- has more than enough on his plate (forgive the pun) these days.

Such a hectic schedule nevertheless didn’t stop him from crafting a special Valentine’s Day menu, featuring either a three course (soup OR salad, main course, dessert) or four course menu (soup, salad, main course, dessert) option.

We stopped by this week to capture some of Zavala’s culinary wizardry and were greeted by a trio of both savory and sweet options – all as colorful as they were flavorful:

Strawberry Kissed Salmon featuring basil caviar cous cous, pear & vodka foam, and frozen strawberry olive oil.

Filet Racini with roasted shallots, brocolini, lobster flan, and cognac butter.

Sabayon & Wild Berry Tacos topped with chantilly cream, raspberries, strawberries, and blackberries.

Other courses on Monday’s menu include a butter poached lobster salad, Florida sweet corn bisque, tuna au poivre, and a positively sinful platter of cinnamon-spiced donuts.

As President Lincoln once said, “Every man is said to have his peculiar ambition.” Clearly, Chef Zavala is gunning for a role on Top Chef!
